Food and tablescape

Suzie heads up the Chateau kitchen and it’s definitely her happy place.  A restaurant owner in her early years, life took her in other directions but she always knew she would return to her first love of food and cooking.  Self-taught, Suzie combines her Antipodean upbringing with French classics to create delicious meals for chateau guests.  Her potager to plate approach means you will usually be eating what was picked from the garden just a few hours ago.  You may even have the chance to accompany her as she selects what will be on the menu that day or join her in the Chateau kitchen for a cooking class.

 

“Having a huge potager at the end of the garden is like a dream come true.  Add to that all the amazing French produce and it’s like being in culinary heaven.  Juicy strawberries, tomatoes that smell of summer,  crunchy new season radishes, finding the wild asparagus, discovering yet another cheese, it never fails to inspire me.  Cooking for guests is an absolute pleasure.”

We were thrilled to welcome Sophie, our talented stylist, to the team in 2022. With her French background and 22 years of experience shaping the aesthetic of the biggest names in Sydney's hospitality scene, Sophie has seamlessly integrated her expertise into the heart of our operations. Her keen eye for design and strong understanding of the culinary world have resulted in stunning tablescapes that perfectly complement our exquisite cuisine. Despite her French roots, Sophie has wholeheartedly embraced Australia as her home, infusing her work with a beautiful blend of European flair and Antipodean charm. Her contributions have truly elevated the dining experience for our guests, and we look forward to many more years of collaboration and creativity with Sophie at Château de la Carrière.
